A Spring in my Step

As we pass the Spring Equinox, nature begins to change the landscape, and my walks take on a completely different feel. 

My eyes begin to feast on buds and blooms which seems to emerge overnight and burst into life. 

My taste buds also begin to tingle as I spot my favourite wild tea combinations and early delights such as the Alexanders which were introduced by the Romans and provide a delicious meal if coated in a light batter and gently fried. Served on a bed of spring salad leaves, I call this ‘alla primavera’ just to keep that Roman theme!

You can find it in hedgerows in late March and April but do make sure you are fully trained on what to pick as the leaves can be confused with less palatable and even poisonous plants.

My ears are also treated to the sounds of birds as they signify their territories with glorious song. I love to listen to the different calls and watch how busy they all are as they begin their courtship and nesting routines. It always seems as everything is active – plants, trees and birds are all literally springing into action with every step I take. 

It certainly encourages me to do more as I welcome the feeling of apricity  (another latin reference and one of my favourite words!) which means the warmth of the sun on my back! 

There’s nothing quite like finding a sheltered sunny spot and enjoying a cup of wild tea. Especially as the nettles and blackberry shoots are unfurling around me with their nutritious, vibrant and very tasty greenness!

An added bonus is that often amongst the nettles, as seen here, you can discover fresh cleavers (or sticky weed) shoots so as long as you have good gloves, you can also pick some of those to take home and steep in cold water overnight. 

Finally, the sun has also coaxed fluffy catkins and pussy willow into bloom and my nose is treated to the coconut scent of the gorse bushes.  In short, a short spring walk has not only provided exercise but each of my senses in turn have been rewarded so I return, refreshed and revitalised. A short stretch before I steep the cleavers so I have a refreshing drink to enjoy before my walk tomorrow!
